The Lighthouse Table is a collection of simple holistic recipes meant to guide you back to the way we, as human beings, are meant to eat… In a way that is natural, nourishing, fulfilling, and fun! Many are raw, most are gluten free, and all are vegan, delicious, and extremely healthy by default.
My name is Chris, I am not a chef or nutritionist by any means. I enjoy eating healthily for both body and mind and have found that the two often go hand in hand; when one slips, the other slips. I cook simply and am still in a very experimental place, but a lot of what I cook is pretty yummy, and I often have friends asking for recipes. This blog is for those friends and new friends.
In addition, my closest friend, Micah, will be adding a recipe and a little bit of nutritional education each week. Micah is a graduate student in Food Policy and Applied Nutrition. She is a holistic, vegan, and gluten free eater and has a beautiful daughter whom she is raising with these same nutritional standards.
